This easy to make recipe has been the highlight of my month! It's a 2 part recipe that makes MULTIPLE meals at a very good price.
PART 1
Ingredients:
- 1 can adobe chillies in chipotle sauce
- 1 can chopped tomatoes•
- approx 500g pork loin
Method:
- Cook in crockpot / slow cooker for the day
- Pull out pork and set aside
- Bottle up the sauce and put in the fridge when cooled (this will be used for part 2)
- Pull pork apart with forks to create shredded pork
Serve:
Can be used for tacos, salad, nachos, burritos, etc.
Makes approximately 4-6 adult serves depending how you use it
We turned ours into a salad with:
- avocado
- tomato
- canned corn
- canned black beans
- quinoa
- cucumber
- fresh coriander
PART 2:
Ingredients:
- Bottled up sauce from part 1
- 1 can chopped tomatoes
- approx 500g chicken
- a dash of: dried coriander, cumin, garlic salt
- 1/2 of water
Method:
- Cook in crockpot / slow cooker for the day
- Pull chicken apart with forks to create shredded chicken
- add in drained can of black beans and cornServe:• serve up broth, chicken and beans / corn into a deep bowl
- add avocado
- sour cream (depending on heat of broth)
- crush corn (tortilla) chips
Use the remainder of chicken for salads, nachos, tacos, etc
