Creamy pumpkin soup
Make the most of pumpkin season with this delicious, cosy soup recipe.
What you will need:
1kg pumpkin, peeled and cut into small chunks
2 orange kumura
6 cups vegetable stock
1 Tbsp grated fresh ginger
2 cloves garlic, crushed
cream (optional)
How to make it:
Place all of the ingredients (except for the cream) in a large pot and bring it to a boil. Then cover and let it simmer until it is soft, about 10 minutes. Remove from heat, add cream and then blend until smooth.
