Let's eat a rainbow
It's January and summer is really here. So along with warm, sunny days and longer evenings, we have a beautiful bounty of gorgeous fruits and vegetables to enjoy.
Here are 7 superfoods to add to your shopping cart this summer:
Tomatoes - An excellent source of vitamin C as well as the antioxidant lycopene.
Berries - Strawberries, blueberries and raspberries are full of vitamin C, fibre and antioxidants (like anthocyanins that give them their beautiful colour!)
Avocados - Packed full of healthy fats, avocados are a great addition to help your meals keep you fuller for longer. And they're delicious!
Capsicum - Eat the rainbow! Capsicum are rich in vitamin C, folate, and fiber.
Zucchini - Grate it up to bulk out meals and add a sneaky servings of veggies. Zucchini is high in potassium and manganese.
Peaches - Their color comes from the antioxidants beta carotene and lutein. Peaches are also high in vitamin C and potassium.
Radishes - Often overlooked but these guys make a great addition to salads and contain lots of vitamin C and other flavonoid antioxidants.
